Kumara & Coconut Patties

2 med Kumara (peeled and grated - raw)
1/2 cup of almond meal
1/4 cup So Good NZ Coconut milk
Seasoning to taste- turmeric or curry, salt and pepper
Mix all ingredients in a bowl
Roll into 8 small parties
Heat pan with 1 -2 tsp of preferred oil
Pan fry on a medium heat for approx 7-8 mins each side.
Makes 8-9 patties and serves 3.
Serve with your favourite chutney, sauce or yoghurt dressing.
If you like coconut feel free to add some to your mixture
Perfect side option for dinner or cold the next day with salad for lunch:)
